That's Bananas!

If you aren't from 'round here you may not know that the entire state of Iowa is in a panic as we endure this ARCTIC VORTEX that's hovering over the midwest. We had a high of -34 (windchill) yesterday, so today's 11 feels almost balmy. And all the Minnesota-ians are rolling their eyes, Ha!

I'm kind of a cold weather gal, myself, and don't mind the cozy days "stuck" at home. Recently I almost wonder if I'm becoming some kind of introvert... then I remember I'm really not. I just adore being home, always have, probably always will. So, yesterday I fired up the oven and set to work on making all things delicous with the mound of blackening bananas I had acquired. It was a win-win really. Win because the warm oven lended to a warmer home, and another win because YAY banana brownies, banana bread and (today) cinnamon swirl banana bread. Plus, triple win...smells amazing. I'm thrilled with how each item is turning out, especially the bread - I shouldn't be surprised as it's Martha's recipe :) Today I'm sharing links with you so you can try it yourself.

First up, banana brownies. These are great for you choco-banana lovers like me :)

I love that they were simple and it's a smaller recipe (think 8x8 pan) so I'm not tempted to eat an entire 9x13. Hey, it's happened. You can find the link to this recipe here. You won't be disappointed! 

Then there's THE ultimate over all banana breads in my opinion. Martha's. :) 
MArtha Stewart Banana Bread - Just Plain old Banana Bread - This is hands down the best banana bread I have ever made and one of the easiest!  Thumbs up!
It has a semi-crusty outside and amazing, soft and chewy inside. I don't how that's possible, but I love eating it. It has sour cream in it which can be subbed in with greek yogurt or something I'm sure. It took about an hour and some minutes to bake but was well worth the wait! This gal featured it on her blog and it was a happy find for me. Find the recipe here

Today I'm working on this beauty...cinnamon swirl banana bread. what?! And yes I am really that excited and yes it appears my appetite has resurfaced. :)

And last on this banana's day (hehe) I feature my afternoon snack. It's simple, yummy, and quick. It's really another one of those win-win-win things I'm all about right now. And, it uses up even more of the banana mound. PLUS, it was featured in Fitness magazine, so....there. Check it here

My Favorite Things Monday {new!}

Then, as I was gathering my thoughts, etc... realized my camera card is missing, half my home is packed up for our move, and... more. So, a LOT of my things will be shared from Pinterest. First up... Favorite Foods/recipes right now:
Crunchy Ramen Cabbage Salad from valerieskitchen.com
Chinese Cabbage Salad is a household staple around here. We make it year round and it's one of my husbands favorite things to eat. I love it because my kids are willingly eating cabbage :) It's also one of my faves because you can change it up with different kinds of oils, vinegars and nuts for the crunchy topping. This recipe here is one of the bests! 

Bananas rolled in Greek yogurt, crushed almonds, and cinnamon, then frozen. Healthy treat!
Yum. Bananas are one of my all time favorite foods anyway...but, pair it FROZEN rolled in yogurt, nuts and cinnamon and it's even better. My only recommendation is to eat them FAST and don't leave them out - they go soggy and brown super fast after being frozen. Super easy, super yummy and pretty affordable too. I made these for a playdate in the Spring and it was a hit with my kids! Check out the recipe here.

Another super easy (and affordable!) summer fave food right now is watermelon cookies. My girls love choosing what kind of "cookie" they will have by choosing their own cookie cutters. We do most of our shopping at Aldi and right now you can get a large watermelon for around $3/4 bucks! That's A LOT of cookies!

Favorite FREE things right now:
Lastnight my husband taught me that you can exchange your empty Starbucks bags for FREE iced coffees. I've always just ordered my free coffee hot and plain, because I thought that's all you could do. Nope. They are more then happy to throw in some ice cubes, skim milk, and classic sweetener on the house. Score! Say what you will about "big"bucks coffee...but, you cannot beat a free iced coffee made FOR you! So, save those bags and cash them in while it's still hot outside. Side note: If you don't want your empty bags - we are always accepting donations :) 

Also, Library summer reading programs. Bless them.
I signed my girls up in June and they had to complete 15 activities to earn a FREE book and two FREE passes {a piece} to our local zoo. And the sign up was free! So, we did our activities - which included a nature hike, do a finger play, read a book, sing a nursery rhyme, etc. and then we cashed in. Each girl got to choose a free book to keep and they handed me the zoo passes. Seriously, so free and so cool. It's not too late - check in with your local libraries and see if they have anything going on.

While everyone else is enjoying summer. I have to admit...I'm always dreaming of Autumn. It's my favorite and were it fall year round, you'd hear no complaining from me. :) Some of my fave ideas for that season are below. You can find them all on Pinterest.

Happy Homemaker Monday

Happy Homemaker Monday
We are in VBS mode around here this week - as we started up last night for this 5 day event. Busy! The kids are having a blast and I think the cool weather may be a blessing in disguise as we pack 180+ students into the church! I'm working in the infant nursery this week and always enjoy cuddling and loving on the littlest ones. :) BIG NEWS for us is... we sold our home! Our closing date is July 24th. Crazy. Right now we don't know what's next - but, we trust in the Lord and His direction for our lives. What a great hope. Happy Monday to you and yours. 

The weather....
Um, I'm freezing. It's mid 60's, breezy, but SUNNY! Summer clothes have been unpacked {it is June afterall} and there is no going back. Will just throw on some socks and a cardigan :) 

Right now I am....
Avoiding cleaning my kitchen. :)

An online find, or two. :)

Hi friends :) I'll spare you from the millions of pics I've been sharing lately. Can you tell that I adore my new camera?! What fun I've been having with it! Ah, what a blessing...still gives me goosebumps!

I wanted to share something I read online today, especially if you have daughters - it's fantastic and kinda made me tear up a bit. The post is called, "24 ways to prepare your young girl to become a lovely woman", and was from the blog "Club 31 Women". Check it out here.
 

I haven't gotten to dig into the blog a ton yet, so I'm not sure what else is there - but, was so encouraged by that post! And, I needed this reminder and know I'll need it again and again. :)

Happy Homemaker Monday - snowing...again.

 

Gooood Morning. It's day 1 of Spring break around here... and we woke up to more snow. I won't complain - though, it does toss a damper on my hopes of really Springin' things up around here. Guess I'll leave the Winter decor up for a few more days. 

We had a whirlwind weekend that included a youth conference at a local church around these parts. Refreshing! I'm so thankful for the families that watched our children so both Hubs and myself could partake in the learning workshops and key speakers :) And, I LOVE our youth leaders...some of the most fun, godly, people I know. Loved hanging out with them this weekend, too. 

The Weather:::
Snow, snow, snow....{can you hear Bing singing?!}

Right now I am:
Sitting in my over sized chair covered in a green afghan. Girls are playing and hubs is curled up on the couch - we are enjoying a relaxed morning.

Thinking:
about my friends... so many hurting friends right now. Life seems so transitional lately and I KNOW God has a plan, sometimes its hard to sit and wait for it.

We decided {after our cable bill went up..again} that cable will be shut down at the end of March, after March Madness. There is SO much trash on tv today - it's horrifying. And, honestly, how convicting to look at our taxes and see how much $ is spent on television. Ouch.

We got to meet Zane Black and Propaganda this weekend at the youth conference. :) Both are great communicators of the truth of God! I love Propaganda's gift at the spoken word -

I have done ZERO grocery shopping - and, though I do have a menu plan written out... we may just have a survivor week and eat what we already have in house. :)

 Working on some spring crafts and decor type things :)

Homemaking Tips:::
Switch up dishwasher detergents. I can't prove that this is a real scientific thing...but, my dishes seemed to stop looking as clean as they usually did after using my normal cleaner for months. So, I grabbed a smaller bag of another brand and now...they look cleaner, again. Wondering if my machine just needed a change - like, when I use a new shampoo?!

Looking around the house:::
The 4 year old is OBSESSED with using scissors, so, I have a billion tiny pieces of paper laying around on the floor.
1 year old in princess jammies.... she is too cute. :)
Random socks. Is this normal for other peoples homes? Just random socks laying around?!

Happy Homemaker Monday - {{freezing}}

Monday, Monday, Monday... what a love/hate thing I have going on with this day. LOVE the new start to a fresh out of the box week, HATE the messy Monday morning routine {sometimes}. But even in the mess and slight chaos of toys, crumbs, dirty dishes and noise I see the blessings of these days with babies and life. Let's see what this week holds, eh?

The Weather:::
I believe we were at all of 4 degrees this morning. Balmy! ;) Wind chills were in the negative, and I won't complain. 

Right now I am:::
Taking a break. Had a super clingy, whiny, early riser all morning. So, now that both girls are down for naps I'm sipping my house blend Starbucks coffee with eggnog creamer, tinkering on FB and Pinterest and just enjoying some quiet time for a few minutes. Bliss! 

Thinking:::
While holding the whiny girl this morning I just kept thinking about how quickly these days are going by. She'll be 2 in May and I'm totally unprepared for another 2 year old. {sniff} I love my babies and it's so difficult to watch them grow up - yet, at the same time... so important. I had a flash forward moment where both girls were teenagers and I was alone in an empty house - def got the emotions running this morning. Cuddled the whiny one a little tighter.

"The Hole in our Holiness" by Kevin DeYoung. FABULOUS! It's my first book of the year - and it's a great, challenging read. A leeeetle outside my norm reading range - but, loving it!

Ah, so enjoying Downton this season. Just finished episode 3 last night on PBS and I have all sorts of questions and no idea where the season will take the characters. So good! Love a good cliffhanger story!

The girls and I will be working on Valentines day decor this week! And, Grammy's bday cards :) 

Homemaking tips:::
There is something about a nice smelling home. I try and keep a candle, air freshener, or scentsy melter going most of the day. It's an easy way to bring beauty into my home. :)

My room is clean! Bed made! Clothes put away! It's a miracle! 
I have the end of a Gold Canyon Moroccan Amber Vanilla candle sitting here...wondering if it will smell good melted in my scentsy? Can you do that?!

These two :) A pinterest idea to keep the little busy while the bigger did school, ended up entertaining them both for quite a while. Who would have thought that pipe cleaners and a colander could be so much fun?

Happy Homemaker Monday {woot}

First of all - Valentines day is EXACTLY a month away. If you are like me... you need the entire time to get things planned and done. Start now. And, you're welcome!

 

Happy Homemaker Monday! My wonderful hubs has taken both our girls upstairs to play and I'm enjoying some quiet alone time on the couch, listening to Rachmaninoff. It's the little things :) We have a busy day ahead and actually a fairly busy week - I hope to be intentional and make the most of every day. 

The Weather::: 
Today it will be 23 degrees. The weather lady jokingly said, "it might feel warm to some of you, but it's not". Wind chill joke? Oh, weather people. I can't complain. I really do like this time of year. Kinda forces you to slow down, breathe, cuddle up and be warm.

Right now I am:::
Enjoying some classical masterpieces via our cable music channel, sipping some Italian Roast coffee, listening to my family play in my 4 year olds room, I'm wrapped in a snow flake blanket from my friend Suzy. 
 
Thinking:::
I can't get an article I read this weekend off of my mind. Moralistic Parenting. Am I training my children to simply be good for goodness sake? Or, is there more to it? Check out that article here.
Hoping to get some thoughts down later this week on this topic.

Well, at least... I think it's fun. I ordered a 5 day clothes organizer for my 4 year old daughters closet. She has entered the "I want to pick out my own clothes" stage. Blah. I'm eager for her to learn responsibility - but the control freak side of me still wants to pick the cute outfits! Our solution {for now} is that I will pick the 5 outfits - she gets to pick which one she wants to wear on what day. :) Sounds fun right? I think so.

Tuesday - Asian beef & noodles {for the girls} But, DATE NIGHT at the TEXAS Road house for mommy and daddy :)

Wipe down bathroom mirror after you shower. Use the steam, skip the windex - looks great and saves a paper towel :) 

Looking around the house:::
Not too bad. Sun shining SUPER bright through the dining room... a few toys out. Lot of blankets tossed on the couch. 1 kid now eating a greek yogurt. 

From the camera:::
My children and my precious Nieces with my grandma, a very special lady, at Christmas. It is so precious to me that my girls know my grandparents! I am blessed.

A retreat, deep thoughts, and... a GIVEAWAY

Last weekend I was able to hang out with some awesome people. Leaders, students, teachers. We had a great retreat and I cannot tell you enough how much I love this group.
The Lord taught me several mini-lessons while on this retreat and I was blessed and encouraged to see my senior girls stand up and take leadership. We are so thankful for our local church body. :) The weekend also may or may not have included stair surfing.

Deep thoughts.
Yesterday I read an article on moralistic parenting, put out by Resurgence. Wow. It has been on my heart and mind ever since. I might do a whole post about thoughts on this sometime this week - seems like something I'm battling with, and couldn't put a name on it. It has now been named. CONVICTED. If you haven't taken the time to read it - let me encourage you to do so. Our children NEED us to teach truth to them - not a morality based gospel. Check out "The Danger of Moralistic Parenting" here. Seriously. Do it.

Last, I have a lil' giveaway planned for sometime this week. :)
It's been A-while and I'm excited to bless some reader with TWO fun things. On a personal note - I've been having a difficult time getting into a good 2013 groove. I had high hopes and plans of how to revamp my prayer life, deepen devotional time, etc. All my plans have failed as we battled traveling, sickness, chaos and just the general start of a new year.  {my tree just came down this week} But, the Lords mercies are new EACH day and I'll start again anew tomorrow. My point is this - sometimes we have all these grand plans and even the really great ones fall flat. I'd like to encourage one of you with some tools I think aid in a good quiet time during your day. :) Hint - music might be included!

November Meal Plan

Before I delve into 30 days of recipes and meals... let me be honest.

I don't know everything. I'm not a spectacular cook. My frugality still needs MUCH improvement. I love fast food. No really... McD's, Wendys, Pizza - still so easy. But I also really enjoy menu planning, attempting to save as much money as possible, feeding my family WELL, blessing others with meals, learning more cooking technique, and using meal time as a ministry to my family. And yes, I know, I know... fast food is so so bad. Which is why for the month of November I'm sticking to my guns and we will eat home made for every meal. {...I haven't mentioned this to my husband, but, I just know he'll be a-ok with it.}Even on ministry nights when things are rushed and crazy - I WILL plan ahead. We WILL not be drive through queens or cave and grab another frozen pizza.{grin}But back to my honesty - sharing this with you is only to encourage. I don't have all the answers or know how. I have been asked time and again how I do my menu planning. How I can at times spend under $100 for two weeks of meals? I have! So today I'm sharing my monthly menu plan and it's sources in hopes to spur you on to try new things, see ways you can save, and use your "shopping time" in a different way once its all done, early.

First, here are some of things I do to save money and time:
-Not every casserole needs a meat. Beans or other items like bulky grains, pastas, etc. are great and MUCH cheaper.
-That said, canned meat and frozen meat are both cheaper then fresh packaged - and still have great value and taste. If you aren't familiar with canned meats and all you can imagine is SPAM... go look again. It's 2012 people, the options have changed. :)
-If veggies are going bad {or herbs} - freeze those dudes! Chop up green onions, broccoli, and sliver carrots for a ready to go stir fry mix already ready already.
-I almost always freeze leftover broth, or any liquid from a crock pot meal - unless its swimming around grease or fatty nastiness. That can be used again for soup. And, makes unique flavor combos!
-As far as actually choosing recipes and meals: I grab a cookbook or handful of my written out cards and fill in my blank wall calendar. I don't plan for Wednesdays, but do plug something else in for every other day of the week. That said...if I'm making a big soup or casserole - I pencil in "left overs" at some point during that same week. There are also nights where we'll do homemade pancakes, scrambled eggs or just whip up whatever we find in the house instead. Flexibility is key!
-I now only plan dinners. Lunches are usually leftovers or something small. Breakfast usually oatmeal, yogurt, cereal, eggs or something baked. :) Tried to plan and buy stuff for lunches...not worth it.
-I do most of my grocery shopping at Aldi. It's down the street from us and has become almost a one stop shop. Their quality has gone up, and their options have grown. Whole milk is $2.59/gallon right now!  Occasionally I still need to hit another grocery or Walmart for a few items {specific meats, seasonal items, cheeses}
-As for sides - I just make whatever I think would go well with it - or, whatever the cookbook picture shows next to it. For example, below in week 3, the turkey cutlets had pictures of potatoes and veggies next to it - easy!
-Also, swap meats. If something calls for ground beef but ground chicken would be cheaper - try it! I own a meat grinder attachment for my stand mixer and can grind just about any type of meat. Wonderful!

Week 1: 1st - 3rd (Random sources for these recipes, so all are linked)
-BBQ pulled pork sandwiches and chinese cabbage salad
-Chicken & potato hand pies w/ roasted Brussel Sprouts
-Raspberry balsamic glazed meatballs over noodles

Week 2: 4th-10th (most of these from here on are from Quick Cooking cookbook, 2011. Search them all on Taste of Home)
-Baked Cavatelli & salad
-Cheesburger Stuffed potatoes
-Pesto Chicken Penne Casserole {MAKES TWO - Freeze one}
-Southwest Chicken Wraps
-Taco Soup
-Cider Pork Chops

Week 3: 11th-17th {Hubs birthday week, so we will go out at least once, oops!}
-Chicken Marinara over pasta
-Salsa sloppy Joes & ranch pasta salad
-Chili Mac & pepperoni salad
-Turkey cutlets, Italian style mixed veggies & crunchy mashed potatoes

Week 4: 18th-24th {Thanksgiving week, we'll be traveling}
-Ham with green beans and rolls {already have all of this in my freezer}
-Parmesan crusted tilapia & mixed veggies
-Beef & Broccoli w/ baked pear halves {my girls think this is a HUGE treat... just pears, halved, and baked til they are oozy}

Week 5: 25th-30th
-Maple pork chops & carrots
-Bacon Cheeseburger Roll ups
-Chicken Fajitas
-Ham Carbonara
-Inside out Stuffed cabbage

And there we have it. A month of meals all planned out, linked, and ready to be made. I shop for about 2 weeks worth at a time and only buy ingredients needed. No extras! I may throw in a dessert or two later in the month and grab those ingredients separately. Otherwise, we are set to go!

Bugs and Links

It's as if the whole world around me is breathing a sigh of relief as we woke up to COOL air {that wasn't from our AC}. We are finally going to be back down into the 80's this week. Our poor area is burnt to a crisp from weeks of 100's and blazing hot sun. My Ava took full advantage of the cool morning and headed outside just as soon as she could. Her excitement was contagious and before I knew it - we were fully into an early morning bug hunt. Jammies and all!
And let me tell you...we had great success! Two whole Cicadas {dead} and lots of "bug shells". There is something so special and wonderful about reliving childhood with your own children. I've said this before, but, I remember doing this very thing when I was her age. Peeking around every tree in our yard looking for "bug shells". We had a great bug hunt and after it was over she went on to play in the yard just enjoying life like 3 year old girls do. Only, mine is always barefoot and still in PJ's. :) 

While Ava was busy playing I brewed some coffee and set up my camping chair in the shade. It was a perfect morning for some outdoor devotions. {finally!} Daddy and Augs were napping so it was calm and quiet. My heart has been bound up with some fears and anxiety the last few days and I know that's a losing battle. I needed quiet time with the Lord and what a gift this perfect morning was just for that very thing. 

I will thank the Lord at all times.
    My mouth will always praise him.
My soul will boast about the Lord.
    Those who are oppressed will hear it and rejoice.
Praise the Lord’s greatness with me.
Let us highly honor his name together.
I went to the Lord for help.
    He answered me and rescued me from all my fears.


Psalm 34. One of my favorites. Sitting in the cool of the morning and just crying out to God was just exactly what I needed - what my heart was craving. The Word of God is powerful and it changes you. I've asked the Lord to cover my heart in peace today... and I know He will take care of us. He always does.

In other news - have you seen that The Gospel Coalition for Women has their audio links up??? Yay! I want to encourage you to take some time and listen to them. These speakers are so gifted at preaching and teaching God's Word. What a blessing to be able to "sit" under such teaching - what a cool tech world we live in today, eh? My heart has been heavy for women lately - as I keep reading about this "Fifty shades" and "Magic Mike" stuff. The world {and prince of this world - Satan!} wants so badly to lure us away from truth...and fill our minds with garbage that robs the soul. For our husbands, for our children, for our SAVIOR we need to pursue truth and wisdom and purity. No wonder so many women are caught up in dispair and false hope - look at what we are filling our brains with!!
Can I beg you to take a listen to truth today? :)

Putting it all together

This morning I can't shake the deep thoughts. Which is good. And, I don't really even try to shake these kinds of things really. While cleaning my girls rooms I thought about them and what they need, who they are, who they will be. I was reminded with each toy placed back in the bin, each dress hung back up, each tutu stored in the dress up closet... that this job is intense. Sometimes it paralyzes me. I'm their mom.

I read an article last night put out by the Gospel Coalition on teaching our children Civility. Ye-ouch! Ah how my heart was convicted. And you know, I thank God for that each time. What a mighty God to care about us so much that He sends His Holy Spirit to convict and work on us. Amen! Would you take some time to check out the blog post? Just click here. :)

In other thoughts -
I'm reading through 1 Kings right now. I love it. In college when I knew a speaker was going to go through that book {or any of those Kingly books} I tried to be front n' center. The storybook type reading just seems to click with me - I can picture myself in the story. Funny how maybe that's even the point. :)
Today, however, was about Solomon's building and building and building some more. I'm not a contractor or engineer....so, reading about cubits and inches and what not maybe wasn't "awesome". All the same its just really encouraging, if nothing else, to read of Men of God who were following His plan! I see the parallel in my own life so often and I am continually reminded, still, of David's challenge to Solomon before he died:

"When David was about to die, he instructed his son Solomon,  “I’m about to leave this world. Be strong and mature.  Fulfill your duty to theLord your God. Obey his directions, laws, commands, rules, and written instructions as they are recorded in Moses’ Teachings. Then you’ll succeed in everything you do wherever you may go." 1 Kings 2


The civility article mentioned above drew me back to thinking about this passage last night. David challenged Solomon to be mature, fulfill what the Lord had called him to, obey really in all things. Though David was not a perfect father - he was the "man after God's own heart". He knew that above all things that leaving this legacy of faith and character in the Lord was what really mattered. And I want to be that kind of parent for my daughters. I want our faith in the Lord, how we treat the people in our lives, how we LOVE to be such a focus. I want to bless my children with an example of civility - not for the sake of civility - but to glorify the Lord and lead my children to Him! In this way we will see success!

I guess what I'm trying mostly to say here is - how thankful I am when the Lord pieces these things together in my heart and mind. Days of learning things seem to be woven together beautifully over time.

Blog Share

Happy Weekend! We are having a creative weekend here, trying to find things to do locally...since we aren't able to get away for a family vacation like we had planned. :/ Maybe next year?

Yesterday we braved that place with the mouse and the games. You know, Chuck E Cheese. {sigh} It was ok. Ava enjoyed the little rides and played a few games. We had the pizza and pop and took a few pics - maybe I'll try and post some this week. I just have to mentally block out the amount of germs and grossness I KNOW is all around me. Oh, the things we do for our childen. After that we strolled through a mall and got starbucks on the way home. Today we are considering a trip downtown to the farmers market, or, maybe the science center. Except, they charge 2 year olds! So, who knows.

Anyway, wanted to share two blog's today that have been a blessing and encouragement to me. Obviously, I'm a little down today... disappointed I guess, as I really WAS planning on getting away for a bit. This has been just such a weird summer. One I hope to never repeat.

The first one is from Passionate Homemaking's post about healthy snacks for mommas. You can read that here. I am in the process of trying to lose the baby weight and this gave me some great ideas on how to snack my way there...correctly. Not that Wild Cherry Pepsi and a bag of chips are bad... {hehehe}

Next, Everyday Tabernacles, at the (in)courage blog. wow. Needed this reminder. Def guilty of letting my attitude get the best of me and not thinking in the little moments.
